When I began my chefs apprenticeship in Melbourne in 1981 it was my dream to one day own my own restaurant. This finally happened in August 2001 when myself and three friends opened The Providores and Tapa Room on London's Marylebone High Street. Previous to that I'd been executive chef, but not owner, of The Sugar Club in Soho and Notting Hill, and before that executive chef at the Mayfair private members club Green Street. However, since The Providores opened I have become involved in many other restaurants and food businesses, some as consultant, some as investor. This was something I hadn't foreseen, but that I have enjoyed immensely.

The Return of The Sugar Club!
An iconic restaurant brand has returned to New Zealand…
Now open on Level 53 of the Sky Tower, Auckland
The Sugar Club has an iconic history in New Zealand, opening in central Wellington in 1986 with Peter as head chef - and being the first Kiwi chef to bring an Asian and Middle Eastern-infused menu to a New Zealand restaurant. Since then, The Sugar Club opened branches in Notting Hill and Soho in London, again with Peter as Head Chef. During this time, Peter also wrote his first of seven cookbooks, The Sugar Club Cookbook.
Peter talks about opening a new restaurant that represents a special period in his life as a young chef starting out in Wellington:
"The Sugar Club in Vivian Street, Wellington, was the first time I had been in charge of what ended up on customers' plates. The food and the restaurant made quite a splash, being a favourite with politicians, top actors and the like. Having moved to London in the late 1980s with the restaurant owners, Vivienne and Ashley, The Sugar Club was incarnated, opening on Notting Hill's All Saints Road, followed by West Soho. Within a short period of time we'd attracted attention from food media as well as the celebrity circuit of the day, including Madonna, Pet Shop Boys and Nick Cave. I hold so many special memories of The Sugar Club and I'm so pleased to have brought it to Auckland."
The Sugar Club menu utilises the best New Zealand produce alongside ingredients sourced from around the globe. It features some of Peter's personal favourites and most popular dishes from the three incarnations of The Sugar Club, as well as many new additions.
